I was SO excited when Frisch’s Commissary asked myself and some fellow bloggers to tour their facility and learn about how they make their delicious pumpkin pies!!! I typically have to turn down daytime opprotunies like this because I have the kiddos at home, but what is so AMAZING about Frisch’s is that they invited my kids along to come and check it out! They truly bring the family mentality into every aspect of their business! They even hire their own drivers, who are Frisch’s employees, to take the homemade food from the commissary to the restaurants.
The facility is HUGE and they cook and bake 80% of the food for the Frisch’s Restaurants right there on site! They get their onions fresh, for example, and make their delicious onion rings on site and ship them out to the store. Did you know if you bite into an onion ring and the entire onion comes out of it’s breading, it’s not fresh?? Frisch’s also makes their own bread, their own chili and soups, and grinds all of their beef. This way they can freeze it and ship it to the stores so it always has the same fresh, yummy taste every time you come back to the restaurant for more! I really tried coaxing them to give them their secret ingredient to their tartar sauce because we all know they add a secret addicting component :), and the only thing they would give up is that they use fresh ingredients and add NO SUGAR! The chef also said it is a really simple recipe as well and one that I think we can all agree must NEVER leave Frisch’s! BEST TARTAR SAUCE EVER!
Of course, one of the many things Frisch’s is known for is their mouth watering pumpkin pie and especially during this time of year. Who can resist a pumpkin pie in the fall???! Frisch’s Big Boy has been baking pumpkin pies from the same closely guarded secret recipe and the best-available, highest-quality ingredients for more than 50 years. They are famous for flaky, handmade pastry crust, creamy pumpkin filling and the perfect balance of special spices. You can see their homemade pastry dough below, first as a dough ball and then formed into the pie crust.
Each Frisch’s pumpkin pie is baked fresh, from 100% pure pumpkin, in their limate-controlled bakery. I learned that many pumpkin pies from other companies are not pure pumpkin, but mixed with “filler” ingredients which definitely changes that pumpkin flavor!
One the filling is made, they have this cool “pie gun” that pulls the pumpkin filling into this barrel (the silver pole you see below) and then it shoots out a precise amount of pumpkin filling so that each pie has the exact same amount. The man who was running this machine said the hardest part is making sure to get the barrel to the next pie shell before the filling comes out!
