Happy Turkey Day!!!
I am celebrating this morning by running the 10k turkey trot…. I may be having a car come and wheel me away because, although I am ashamed to admit it, I haven’t trained at all for this race. Having run a 10k before I know how brutal it can be so I am just hoping I don’t injure something!! My goal today is just to finish and since it is a walk/run, I am not going to pressure myself to try to run the whole thing. If I can make it across the finish line in one piece I will be happy!!
We are having a small gathering at our new house for thanksgiving this year and I am hoping my sis will venture out with the baby so we can all celebrate together! We will be doing our usual deep-fried turkey (if you have never tried a deep-fried I highly recommend it!), broccoli casserole, sweet potato casserole, mashed potatoes, stuffing, cranberry sauce and rolls. I am making a pumpkin roll for dessert. YUM!! I love thanksgiving dinner and getting together with the family. Thanksgiving is always a great reminder that we have so much to be thankful for (we can all be reminded of this)!
With all that turkey dinner you will surely have leftovers. Use it up and don’t waste a thing! You can make turkey sandwiches or turkey gumbo or turkey soup. If you have leftover sweet potatoes that didn’t make it into the casserole you can make sweet potato fries! I found an AMAZING recipe on this totally cool website: Instructables. It walks you through anything you are looking to do step by step and with pics (that totally helps me to see what is being done)! I followed the recipe exactly, except for the oil. I used a garlic grape seed oil (from Wildtree) which has a fantastic flavor and it kicked it up just a notch!!
