I promised I would be sharing this Mango Salsa recipe from Whole Foods with you using their delicious Mangoes!
Salmon is my go to fish since it doesn’t have a fishy taste and it is so easy to make!
You want to preheat your oven to 425°F. Spread salmon on all sides with olive oil and sprinkle with salt and pepper. Place salmon skin-side down in a baking dish and bake for 10 minutes. Cooking time will vary, but you want your fish to flake when touched with a fork.
Mango Salsa
- 2 Ataulfo Mangoes (you can see how to cut on here). It made it SO easy to use this cutting technique for the salsa.
- 1 fresh jalapeño pepper, seeded and finely chopped
- 1 1/2 tablespoon lime juice
- 1/2 teaspoon salt
Add all of these ingredients to a bowl and mix together. I was able to have the salsa prepped and ready before the fish was out of the oven! I love this easy and healthy recipe because it only take a few ingredients and very little time. The mango makes a sweet topping that even my kids loved!
